I love lumpia! I make it at least twice a week. We have it for breakfast, lunch, dinner even as a snack! Now, you're thinking it's gonna taste bland if you eat it again and again. Well, I have acquired a lot of different recipes for sauces to make... one from my mom, one I got from my cousin and the last one from my mother-in-law.
LUMPIA SWEET AND SOUR SAUCE
4 tbsp brown sugar
2 tbsp cornstarch
1 tbsp soy sauce
1 tsp salt
1 cup broth or water
2 segments garlic, crushed
1. Combine all dry ingredients and dissolve in water.
2. Cook until thick (in low fire)
3. Mix in garlic.
MILD CHILI SAUCE
1 1/2 cup canned tomatoes
2 cups chopped onion
2 chili (siling labuyo)
1 cup chopped celery
2 pods canned pimiento
5 bay leaves
1 tbsp salt
1/2 tsp thyme
1/2 cup calamansi juice
1/2 tsp sweet chili powder
1/4 cup brown sugar
1. Cook all ingredients together except kalamansi for 20-30 mins.
2. Cool and add kalamansi juice.
3. Remove bay leaves. Pour through fine strainer or blenderize.
4. Makes 1 quart.
LEMON-GARLIC SAUCE (this is a Cambodian Sauce, try it and you'll get addicted, its even great for roasted meat, fried fish..)
3 cloves garlic, minced
6 lemons, squeeze juice (kalamansi can be used about 20 pcs)
1 chili, chopped finely
5 tbsp brown sugar
3 tbsp thai fish sauce
Mix all ingredients together. Just add more sugar depending on your taste.
