Baked Macaroni

Its family tradition. We always have baked mac or lasagna during Christmas Eve dinner or Noche Buena. It never seems to be complete without this pasta :)

So, to get you into the Christmas mood.... i mean cooking mood, I'm posting our favorite baked macaroni recipe. Go ahead, try it! It's even great for parties, merienda and kids love it!

You'll Need:

1 chicken breast - boiled, shredded
1 can sliced mushroom - diced (save liquid)
1/2 cup olive oil
1 whole garlic - minced
1 medium sized onion - diced
1/2 red pimiento - diced
1 tbsp paprika
1 tsp oregano
1 tsp sugar
1 tsp salt
pepper
1 small can tomato paste
3/4 cup chicken broth
1 cup grated queso de bola
500 grms. macaroni, cooked per package directions

Procedure:

  1. Saute garlic, onion, pimiento in olive oil. Add chicken breast and mushrooms. Season with paprika, oregano, sugar, salt and pepper. Simmer for 3 minutes.
  2. Add tomato paste and mix well.
  3. Pour liquid from canned mushroom and chicken broth. Simmer in low heat for 20-30 minutes or until oil starts to separate.
  4. Add salt and pepper to taste. Stir in 1/2 grated queso de bola.
  5. Mixed in cooked macaroni. Add one teaspoon olive oil. Transfer to baking dish and top with remaining queso de bola.
  6. Bake in 350F oven for 20 minutes, lower to broil and cook for 5 minutes.
  7. Serve with garlic bread.
