
So, to get you into the Christmas mood.... i mean cooking mood, I'm posting our favorite baked macaroni recipe. Go ahead, try it! It's even great for parties, merienda and kids love it!
You'll Need:
1 chicken breast - boiled, shredded
1 can sliced mushroom - diced (save liquid)
1/2 cup olive oil
1 whole garlic - minced
1 medium sized onion - diced
1/2 red pimiento - diced
1 tbsp paprika
1 tsp oregano
1 tsp sugar
1 tsp salt
pepper
1 small can tomato paste
3/4 cup chicken broth
1 cup grated queso de bola
500 grms. macaroni, cooked per package directions
Procedure:
- Saute garlic, onion, pimiento in olive oil. Add chicken breast and mushrooms. Season with paprika, oregano, sugar, salt and pepper. Simmer for 3 minutes.
- Add tomato paste and mix well.
- Pour liquid from canned mushroom and chicken broth. Simmer in low heat for 20-30 minutes or until oil starts to separate.
- Add salt and pepper to taste. Stir in 1/2 grated queso de bola.
- Mixed in cooked macaroni. Add one teaspoon olive oil. Transfer to baking dish and top with remaining queso de bola.
- Bake in 350F oven for 20 minutes, lower to broil and cook for 5 minutes.
- Serve with garlic bread.
