Cantonese Style Fried Prawns

Chinks loves prawns and thankfully it is readily available in all markets here in Phnom Penh. Here's our fave recipe for prawns..
Ingredients:

500 g medium sized prawns
1/2 tsp salt
2 slices ginger, chopped finely
2 cloves garlic, chopped finely
1 tsp dark soy sauce
2 red chillies - cut into pcs.
3 tbsp cooking oil

Procedure:

Wash prawn leaving the head and tail intact. Season with salt.
Heat oil in pan over medium flame. Add in chopped ginger and garlic. Fry till fragrant, add in prawns.
Keep stirring for 7-10 minutes (if too dry, sprinkle a little water)
Add in soy sauce and chillies and garnish with tomatoes.
Serve hot.
